Farinata is a classic Italian flatbread made from very few and simple ingredients: chickpea flour and water. It’s crispy on the outside and slightly creamy on the inside.
This dish is typical of Liguria. It’s such a simple recipe but it is incredibly tasty. It’s also known as cecina and socca and it’s flatbread or pancake if you like, made from chickpea flour, water, olive oil and salt. It can then be flavoured with fresh herbs like rosemary and salt and can be topped with onion, vegetables and more.
When cooked the flatbread has a delicious crusty top and a creamy middle.

Ingredients
- Chickpea flour (Gram flour)
- Water
- Olive oil
- Salt
Step by step method
In a bowl first, mix chickpea flour with water and mix well to remove any lumps. Then add oil and salt and mix well.
Remove the foam from the top and let rest for 30 minutes. When done stir again to remove any flour sitting at the bottom of the bowl then pour into an oiled baking tin. Cook for 25 to 30 minutes until slightly browned on top. Cut into slices and enjoy!

Farinata – Italian Chickpea flatbread | Quick Recipe
Ingredients
- 2 1/2 cup chickpea flour 215
- 2 cups water 475 ml
- 2 tbsp olive oil
- 1 tsp salt
Instructions
- Pour water into a bowl then gradually add chickpea flour and mix well with a whisk to remove any lumps. Then add oil and salt and mix well. Remove the foam from the top and let rest for 30 minutes.
- When done stir again to remove any flour sitting at the bottom of the bowl then pour into an oiled baking tin. And cook for 25 to 30 minutes until slightly browned on top. Cut into slices and enjoy on its own or with a spread.
