Quick and Easy Pasta with Broccoli

This Pasta with broccoli is one of my favourite meals to have in the fall, it’s super quick, nutritious and super tasty. All you need is broccoli, pasta and not much else and it’s ready in 15 minutes!

This Pasta with broccoli is one of my favourite meals to have in the fall, it’s super quick, nutritious and super tasty. All you need is broccoli, pasta, and not much else and it’s ready in 15 minutes!

If you’re looking for a quick dinner, you’re going to love this. I make this at least once week when it’s broccoli season, it’s just so comforting and easy to make! It is also a great way to get in some more veggies and to use up broccoli if you have a lot!

This meal comes together super quickly and it’s full of flavours, from the olive oil, the garlic, the sun-dried tomatoes. The broccoli is overcooked to create a creamy sauce that blends with the pasta.

BROCCOLI PASTA RECIPE INGREDIENTS:

  • Orecchiette or other type of pasta
  • Breadcrumbs
  • Garlic
  • Sun dried tomatoes in olive oil
  • Salt, pepper
  • Olive oil
  • Chili flakes

PASTA WITH BROCCOLI STEP BY STEP INSTRUCTIONS

  • Bring to boil a large pot of water, salt it then boil the broccoli florets and stalks in the water and cook for 5 minutes. Now remove half of the broccoli from the pan with a slotted spoon it, bring it to a boil again then add the orecchiette and cook for 5/6 minutes (check the package instructions).
  • In the meantime, heat up some olive oil in a pan, add minced garlic, chopped sun-dried tomatoes, chili flakes cook for a few minutes on low heat. Add the first batch of broccoli rabe, add some pasta water and continue cooking on low heat until soft.

Drain the pasta (keep some water) and broccoli and add everything to the pan. Now toss well to create a creamy sauce, adding some pasta water to help.

To make the breadcrumbs, heat up some olive oil in a pan on medium heat, add breadcrumbs and toast until brown. Keep mixing to avoid burning.

Serve the pasta and top with breadcrumbs.

BROCCOLI PASTA TIPS FOR SUCCESS

  • Boil the pasta al dente. It will continue cooking when you add it to the pan and toss it with pasta water. You don’t want it to become soggy.
  • Remember to keep aside some pasta water when draining the pasta. The water is full of starch and it helps to bind and thicken the sauce, making it super creamy.
  • Use high quality ingredients, especially olive oil and broccoli.

Ingredients
  

  • 300 g fresh orecchiette
  • half a broccoli head and stalk
  • 1 garlic clove minced
  • 4 sun-dried tomatoes in oil cut in stripes
  • a pinch chili flakes
  • Breadcrumbs to taste
  • Olive oil to taste

Instructions
 

  • Cut the whole broccoli into small pieces (the stalk too) Then boil it in boiling water for 5 minutes.
  • Sauté minced garlic, sun dried tomatoes and chili flakes in some olive oil. Take out half of the broccoli with a spotted spoon and add them to the pan with some pasta water, mix to combine and keep cooking on low heat
  • Add the orecchiette to the same pasta water and cook for 5/6 minutes (according to the package instructions)
  • Drain everything and add it to the pan with some more pasta water and toss to combine crating a creamy sauce.
  • For the toasted breadcrumbs heat up some olive oil in a pan, add the breadcrumbs and cook until golden stirring continuously so they don’t burn.
  • Serve the pasta and top with toasted breadcrumbs
