Vegan, flourless and refined sugar-free brownies! These delicious brownies are made with an ingredient that might be considered unusual: cannellini beans.

Vegan Cannellini beans brownies. These delicious brownies are made with an ingredient that might be considered unusual: cannellini beans. These cannot be tasted but they add lots of protein to this snack! They are also flourless, gluten-free and refined sugar-free! The perfect healthy snack.

I absolutely love brownies and I love them even more when I can sneak in some healthy ingredients. In this case, cannellini beans create the perfect texture but also make them healthier and rich in protein. They are also gluten-free and sugar-free thanks to the use of dates.

They are really fudgy and the pecans create a nice contrast in every bite. You can certainly swap the cannellini beans with other types of beans, but you might be able to taste them more.

What you will need:

  • Cannelini beans
  • Dates, pitted
  • Flax eggs
  • Vegetable oil
  • Dark chocolate
  • Cocoa powder
  • Chocolate chips
  • Pecans/Walnuts
  • Salt
  • Baking powder

Kitchen equipment:

  • Oven
  • Blender/hand mixer
  • Microwave or small pot

These cannellini brownies are:

  • fudgy
  • soft
  • rich in protein
  • delicious

How to make a flax egg:

Mix 2 tbsp of ground flax seeds with 6 tbsp of hot water, mix and let sit until it becomes sort of gloppy. (Alternatively, you can use chia seeds)

What you can use instead of a flax egg:

  • 1 banana, mashed
  • 1/2 apple sauce
  • 6 tbsp peanut butter

Why I use dates:

I use dates to avoid using refined sugars. Dates are high in calories but they also come with lots of nutrients. They are in fact a healthy substitute for sugar because of their sweet taste and added nutrients such as fibre and antioxidants.

Step by step method:

  • First, in a blender, blend cannellini, dates, oil, baking powder and a pinch of salt. Blend well until there are no lumps and the dates are no longer visible.
  • Preheat the oven to 175C
  • Melt the chocolate over a water bath: simply bring some water to the boil in a pot and place a bigger pot over it. Cut the chocolate in small bits and add it to the small pan, the heat from the water will slowly melt it. Alternatively, melt the chocolate in the microwave, 30 seconds at a time.
  • When the chocolate is melted add it to the cannellini mixture together with the cocoa powder. Mix to combine, then add chocolate chips and pecans.
  • Cook in the oven for 25/30 minutes until the sides separate from the paper. Leave to sit for 10 minutes, cut into slices and enjoy!

Ingredients
  

  • 1 can cannelini 250 once rinsed
  • 1 cup dates pitted
  • 2 flax eggs
  • 2 tbsp vegetable oil
  • 80 g melted dark chocolate
  • 2 tbsp cocoa powder
  • 1/3 cup chocolate chips
  • 1/3 cup pecans
  • pinch of salt
  • 1 tsp baking powder

Instructions
 

  • Preheat oven to 175C. In a blender, blend canellini beans, dates, oil, baking powder and a pinch of salt. Once blended melt the chocolate using a water bath then add to the blender together with the cocoa powder. Blend again then add chocolate chips and walnuts and mix to combine. Pour the mixture in a greased baking tin or use baking paper. Cook in the oven for 25/30 minutes until the sides separate from the paper. Leave to sit for 10 minutes, cut into slices and enjoy!
