Vegan Mince Stuffed Zucchini Boats

Stuffed zucchini were such a staple in my childhood! They are so comforting and make up the perfect lunch and dinner. I love zucchini because are so versatile and I love to try them in all forms, whether spiralised into noodles, grilled, in soups and more!

If like me you like zucchini, you should definitely give these a try! And even if you don’t like them, I’m sure this recipe will change your mind! These vegan stuffed zucchini are the ultimate comfort food that will not make you miss any animal products.

Plant-based mince is the perfect alternative to meat, with a similar texture, it is high in protein, a good source of fibre and free of gluten.

These vegetarian baked zucchini boats are really easy to make and the are the ingredients you will need:

  • Zucchini
  • Vegan mince
  • Tomato paste
  • Carrot
  • Onion and garlic
  • Olive oil
  • Canned tomatoes
  • Oregano and parsley
  • Vegan grated cheese

How to make these vegan stuffed zucchini

  1. Cut the courgettes in half lengthways. Scoop out the flesh with a spoon and leave some skin on the borders. Set aside.
  2. In a pan heat up some olive oil, add onion, garlic and carrot and let cook for a few minutes.
  3. Add parsley, oregano and tomato paste. Then add vegan mince, canned tomatoes and cook for 10 minutes, then add courgette flesh and cook for 2-3 minutes.
  4. Stuff each courgette half and top with vegan cheese.
  5. Bake for 30 minutes at 200C. Enjoy!
