This Sun-Dried Tomato and Tofu Pasta sauce recipe is great because it is super quick and super tasty! No need to cook anything and you can whip up a super delicious sundried tomato pasta sauce!

This recipe is perfect for busy people, all you need is the time it takes for the pasta to cook to make the sauce, with requires virtually no cooking or chopping. Throw all the ingredients in a bowl, blend them and you’ll have a delicious and nutritious sauce for your lunch or dinner!

The main ingredient in this recipe is Tofu, which is a great source of protein and contains all nine essential amino acids. Some people don’t like tofu or don’t really know what to do with it, this recipe is a great way to use it or try it if you’ve never have. Tofu is so versatile, it can be used for so many things and this is just an example, I love to use it to make sauces like this one.

The other main ingredient is sun-dried tomatoes, which I love using with pasta, either chopped up or mixed in the sauce. They are rich in vitamins, minerals, and antioxidants.

Main ingredients for this tofu pasta recipe:

  • Firm tofu
  • Sun-dried tomatoes
  • Cherry Tomatoes
  • Olive oil
  • Fresh basil
  • Salt, pepper, herbs

HOW TO MAKE IT

  1. First, soak the sun-dried tomatoes in boiling water for 5-10 minutes.
  2. Then add them to a bowl or blender together with the water then add tofu, basil, cherry tomatoes, olive oil, salt, pepper and herbs.
  3. Blend everything until smooth.

In the meantime cook your pasta, here I used paccheri but you can use any type. Salt the water and boil the pasta according to package instructions.

When the pasta is done, keep aside some pasta water. Then add your tofu and sun-dried tomato mix to the pasta, add some pasta water and mix to combine until a nice and creamy sauce is created. Serve, top with basil and some vegan parmesan.

Ingredients
  

  • 150 g tofu
  • 5/6 susndried tomatoes soaked
  • 5/6 cherry tomatoes
  • 1 tbsp olive oil
  • 7/8 basil leaves
  • Salt pepper, mixed herbs
  • 200 g pasta of choice

Instructions
 

  • Soak the sun-dried tomatoes in boiling water for 5-10 minutes.
  • Add the sun-dried tomatoes with the water to a bowl or blender then add tofu, basil, cherry tomatoes, olive oil, salt, pepper and herbs.
