Smashing vegetables as been a trend for a while, smashed potatoes in particular! And for brussel sprouts, it gives you the best of everything: the deeply caramelised, crispy edges we crave in roasted vegetables, plus the convenience and speed of an air fryer.
With the air fryer, you've got crunch in almost half the time than with the oven. And when you smash the sprouts, you increase surface area, which means more browning, and more flavour!

Here's what you'll need for the full flavour of crispy smashed brussels sprouts in the air fryer. See the recipe card below for exact quantities.
- Brussels sprouts serve as the foundation: firm, hearty, and full of natural sweetness when cooked properly.
- Olive oil helps carry flavour and ensures those edges crisp up rather than steam.
- Salt
- Nutritional yeast adds a savoury, slightly cheesy note without dairy, elevating the side beyond plain roasted greens.

Instructions

- Step 1: Clean and trim the brussels sprouts. Remove any wilted outer leaves and trim off the stem ends.

- Step 2: Steam them for about 10 minutes, covered, or until a knife goes through easily, they should be tender but not falling apart.

- Step 3: Pre-heat your air fryer to 180 °C/350 °F

- Step 4: Using a heavy glass or flat bottom of a jar, smash each sprout so it's flattened but still intact.

- Step 5: Place the smashed sprouts in the air fryer basket in a single layer. Drizzle with olive oil, sprinkle with salt and nutritional yeast.

- Step 2: Cook for 8-10 minutes, turning halfway through to ensure even crisping.
In the meantime make the dip. Mix soy yogurt with wholegrain mustard and maple syrup.
Remove the brussel sprouts when the edges are golden and crispy; enjoy immediately for best texture and dip them the yogurt dip!

Equipment
You'll want:
An air fryer with a basket big enough to hold the sprouts in a single layer (crowding will reduce crispiness).
A flat-bottomed glass or jar to smash the sprouts.
Tongs to flip partway through.
A trimming knife and a steamer or pot for the initial cook.
If you have a smaller air fryer, you may need to do two batches to keep that single-layer crispiness. If you don't have an air fryer, you can technically use the oven (425 °F for 15-20 minutes), but you'll miss some of that rapid blow-air crispiness.

Storage
These smashed brussels sprouts are best eaten fresh, as the crisp edges soften over time.
Store in an airtight container in the fridge for up to 2-3 days.
Reheat in your air fryer at 350 °F for 2-3 minutes to regain some crisp. Avoid the microwave if you care about texture, it'll go limp.
