Smashed Brussel Sprouts - Air Fryer

Crispy, golden, and tender Brussels sprouts made quick in the air fryer, seasoned simply for a delicious, healthy side in under 30 minutes.

Ingredients
  

  • 17 oz brussels sprouts 500 grams
  • Olive oil
  • Salt
  • Nutritional yeast
  • 4 tablespoon unsweetened yogurt of choice I use soy
  • 1 teaspoon wholegrain mustard
  • 2 teaspoon maple syrup

Instructions
 

  • Clean and trim the brussels sprouts. Remove any wilted outer leaves and trim off the stem ends.

  • Steam them for about 10 minutes or until a knife goes through easily - they should be tender but not falling apart.
  • Pre-heat your air fryer to 180 °C/350 °F
  • Using a heavy glass or flat bottom of a jar, smash each sprout so it's flattened but still intact.
  • Place the smashed sprouts in the air fryer basket in a single layer. Drizzle with olive oil, sprinkle with salt and nutritional yeast.

  • Cook for 8-10 minutes, turning halfway through to ensure even crisping.
  • In the meantime, make the yogurt sauce by combining yogurt, wholegrain mustard and maple syrup
    4 tablespoon unsweetened yogurt of choice, 1 teaspoon wholegrain mustard, 2 teaspoon maple syrup
  • Remove when the edges are golden and crispy; enjoy immediately for best texture.
