GINGERBREAD IN A MUG!

Cake in 3 minutes? That’s the beauty of mug cakes. I’m obsessed with mug cakes because they are so easy and they are perfect to satisfy sweet cravings when you don’t want to bake a whole cake! This mug cake is a vegan microwave cake that takes a few minutes only to make.

It’s the perfect single serving, but I don’t see why you can’t can make a lot of mug cakes for a family gathering! This flavour is the perfect christmassy flavour, with cinnamon and ginger, it’s gingerbread in a mug!

Winter months are about cozy foods and this christmas mug cake recipe is perfect! It is made with warm spices that make it smell amazing as well as tasting delicious.

All you need to do is mix the ingredients in a bowl and microwave it for about 3 minutes, that easy!

INGREDIENTS

  • Flour, I’m using plain flour but you can also do a mix of plain and wholewheat flour. I haven’t tried with gluten free flours.
  • Brown sugar, or another sweetener like erythritol
  • Spices: cinnamon and ginger
  • Baking Powder, If you don’t have it you can substitute flour with self raising flour.
  • Plant milk of choice, I used soy but any will work
  • Neutral oil, like vegetable oil
  • Salt, a pinch of salt works well in all baked goods.

HOW TO MAKE THIS GINGERBREAD MUG CAKE

  • Mix dry ingredients: In a bowl mix flour, sugar, baking powder, cinnamon and ginger.
  • Add wet ingredients: Add milk and oil. 
  • Optional: Transfer to a mug for a cleaner finish.
  • Cook: Microwave for 3.15 minutes
  • Chill: Let rest for 5 minutes
  • Garnish: Cover with icing, some cinnamon and enjoy!

HOW MANY SERVING DOES THIS RECIPE MAKE?

The quantities for this recipe will make one mug cake. To make more, simply choose the function on the recipe below, that will multiply the ingredients for how many you need. Make it in a bigger bowl and pour it in mugs evenly. Microwave one at a time.

Ingredients
  

  • 3 tbsp flour
  • 1 1/2 tbsp brown sugar
  • 1/4 tsp baking powder
  • 1/2 tbsp neutral oil such as grapeseed
  • 2 tbsp milk of choice I used soy
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • A pinch of salt

Instructions
 

  • In a bowl dry ingredinets then add milk and oil.
  • Trasnfer to a mug for a cleaner finish
  • Microwave for 3.15 minutes
  • Let chil for 5 minutes, cover with icing, some cinnmaon and enjoy!!
