Chili Sin Carne | Easy And Comforting Meal With Vegan Mince

This is one of my favourites comfort foods. I used to love it as a non-vegan, and the vegan version is just as delicious! It’s the perfect dish to impress any non-vegans, vegan mince is surprisingly similar to real mince and the strong flavours of the chilli will give the overall dish a delicious taste. This recipe can also be made completely “meat” free, you can add more peppers and black beans and avoid using mince. You can also substitute it for soy chunks.

This vegan chili sin carne shows how vegan food doesn’t have to be complicated, swapping mince for vegan mince is a very straightforward swap and nowadays there are so many delicious alternatives, where the texture is spot on. All major supermarkets have vegan mince of some sort of meat alternative.

I’m not a fan of spicy food, hence why the recipe calls for a small amount of chili. It can be made spicier simply by adding more chili.

What you will need to this vegan chili sin carne

  • Vegan mince
  • Bell pepper
  • Red kidney beans/ black beans
  • Corn
  • Onion
  • Cumin
  • Paprika
  • Oregano
  • Chili flakes
  • Tomato paste
  • Chopped tomatoes
  • Vegetable stock
  • Salt and pepper

Step by step method

  1. Sauté onion in a little olive oil for a few minutes until soft
  2. Add chopped red bell pepper and spices and herbs and mix to combine
  3. Add tomato paste, canned tomatoes and vegetable stock. Let cook for 10 minutes
  4. Add vegan mince and red kidney beans and cook for 5-8 minutes (depending on the cooking time of the mince).
  5. When it is done add corn, salt and pepper to taste and mix to combine.
  6. Serve over rice, with potatoes, alone with bread and top with fresh parsley and chili flakes.

Notes

  • If you want to make it more spicy, add more chili flakes with the spices
  • You can substitute the vegan mince with vegetables, more beans or peppers, or soy chunks
  • You can subsitute beans with any other kind of bean: pinto beans, black beans, white beans etc.

Ingredients
  

  • 220 g vegan mince
  • 1 red bell pepper
  • 1 can black/red kidney beans 400g
  • 100 g corn
  • 1 red onion
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 tsp oregano
  • 1 tsp chili flakes more if you like it spicy
  • 1 tbsp tomato paste
  • 1 can chopped tomatoes
  • 1 cup vegetable stock
  • Salt and pepper to taste

Instructions
 

  • Sauté onion in a little olive oil for a few minutes, then add chopped red bell pepper and spices and herbs ( add more chili if you like it spicy). Mix to combine the add tomato paste, canned tomatoes and vegetable stock. Cover and cook for 10 minutes, then add vegan mince and red kidney beans and cook for 5-8 minutes (depending on the cook time of the mince). When its done add corn, salt and pepper to taste and mix to combine. Serve over rice and top with fresh parsley and chili flakes.
