Authentic Santorini Fava – Yellow Split Peas Dip

Santorini fava is a yellow split peas dip that you will find all around the island of Santorini. It’s also super simple to make so try it to experience some delicious greek food wherever you are.

I learned how to make it in Santorini with a greek chef so if you’re looking for a recipe that will taste just like the one in Greece, this is it!

The dip is served with capers and either raw onion or caramelised onion. You can serve it as a delightful appetizer or dip, accompanied by some extra virgin olive oil and some pita bread on the side!

What is santorini fava made of?

Contrary to what the name might suggest, santorini fava is not made of fava beans, it is made with yellow split peas. The word ‘fava’ comes is in fact the Greek word for yellow split peas.

Ingredients you need for Santorini Fava:

  • yellow split peas
  • water
  • salt
  • bay leaf
  • garlic cloves
  • white onion
  • extra virgin olive oil 
  • capers

Authentic Santorini Fava – Yellow Split Peas Dip

A super delicious fava dip that you will find all around the island of Santorini. It’s also super simple to make so try it to experience some delicious greek food wherever you are.

Ingredients
  

  • 150 yellow split peas
  • 300 g water
  • 1 tsp salt
  • 1 bay leaf
  • 2 garlic cloves
  • 1 white onion cut in chunks
  • 1/4 cup olive oil
  • 2 tbsp capers

Instructions
 

  • Wash the peas well, then soak in water for 20 to 30 minutes. Boil them together with a bay leaf, garlic and white onion, until soft, at least 20 minutes.
  • Remove the bay leaf and add the mixture to a blender, add salt, olive oil and blend.
  • Serve and top with raw onions, capers and more olive oil. Sometimes caramelised onions are used.
