Vegan Zürcher Geschnetzeltes

A traditional Swiss meat dish from Zurich made vegan using Seitan and vegan cream.

Ingredients
  

"Meat"

  • 500 g seitan
  • 1/2 cup flour of choice
  • Salt and pepper
  • 3/4 tbsp olive oil

Sauce

  • 1 white onion finely chopped
  • 2 bay leaves
  • 1/2 cup + 1 tbsp apple cider vinegar
  • 1/2 cup red wine
  • 5 cloves
  • Salt to taste
  • Freshly ground pepper to taste
  • 150 ml soy cream
  • 1/2 cup soy milk
  • water in case it becomes dry

To serve

  • Potato Rösti grated potato seasoned with salt and pepper cooked in a pan with olive oil

Instructions
 

  • To a pot, add the onion, bay leaves, cloves, red wine, apple cider vinegar, salt and pepper. Boil until the liquids evaporate. Remove the bay leaves.
  • Cut the Seitan in thin strips and coat in flour. Heat up some olive oil in a pan then add the seitan to it and cook for 5/10 minutes.
  • Then add the onion mix, mix to combine and add soy cream and milk and cook for 5 minutes. If it becomes too dense add more water and continue cooking.
