Sautee onion and peas in some olive oil for 5/10 minutes, adding some water if mecessary. Season with salt.
Add to a food processor or use a hand blender, add bread, basil, salt and pepper. Blend well and assemble with your hands slightly wet.
Sautee in a pan with some oil until browned on both sides. Alternatively cook in the oven at 200 grill setting for 10/15 minutes.
Tzatziki
Grate the cucumber than get rid of excess water with a strainer, then mix with plant-based yoghurt, mint, minced garlic, lemon juice and salt and pepper.Chill for 30 minutes before serving.
