Make the crispy tofu (click the link in the ingredients)
In the meantime in a pan, heat 1 tablespoon of oil over medium heat. Add 2 finely chopped onions and cook until softened and caramelized, about 15 minutes. Stir 4 tablespoon tomato paste and cook for an additional 2 minutes to enhance its flavor.
Add 2 tablespoon soy sauce, 2 tablespoon water, ½ teaspoon apple cider or white vinegar, and ½ teaspoon maple syrup to the pan. Mix well and cook for 2-3 minutes until the mixture thickens into a glossy sauce. Once the tofu is ready and crispy, add it to the mixture, adding some water if necessary and mix until combined.
Assemble the tacos
Warm the taco shells in a dry skillet or oven for a few minutes.
Fill each taco with some vegan yogurt mixed with some lime juice, the grated tofu mixture, and add your favourite garnishes, I went for pickled carrots and onions, fresh parsley and lime
