baking powder

teaspoon
cinnamon

soy milk
250 ml

tablespoon
lemon juice

teaspoon
vanilla extract

tablespoon
neutral oil
Instructions
Mix milk and lemon juice to make “buttermilk”.
Combine flour, cinnamon and baking power then add the buttermilk, oil and vanilla extract.
Mix well then pour ¼ of a cup into a non stick pan on low/medium heat and cook until bubbles form, then flip the pancake and cook for a few more minutes.
Top with fruit and maple syrup! Enjoy!
