Easy Vegan Cheese Ball (Truffle Flavour)

This truffled vegan cheese ball is so delicious. It's easy and quick to make, creamy and full of flavour. It is the perfect appetiser to spread on some crackers and believe me it will not last long!

Ingredients
  

  • 1 cup cashews soaked in hot water for 5 minutes
  • 3 tsp nutritional yeast
  • 1/3 cup water
  • 4 tbsp cornstarch
  • 1 tbsp truffle oil
  • 1 tbsp lemon juice
  • a pinch of garlic powder
  • a pinch of salt
  • 1 tsp mixed herbs

Instructions
 

  • Put all ingredients except chives into a high speed blender and blend until smooth.
  • Place in a pot on low/medium heat and cook stirring continuously until it becomes firmer.
  • Place into a container and refrigerate for 1 to 2 hours.
  • Take out of the container and cover in chives, slice and enjoy
