A super delicious fava dip that you will find all around the island of Santorini. It’s also super simple to make so try it to experience some delicious greek food wherever you are.
Wash the peas well, then soak in water for 20 to 30 minutes. Boil them together with a bay leaf, garlic and white onion, until soft, at least 20 minutes.
Remove the bay leaf and add the mixture to a blender, add salt, olive oil and blend.
Serve and top with raw onions, capers and more olive oil. Sometimes caramelised onions are used.
