First cut your ciabatta bred in horizontal slices. For each one, slice it vertically. Place on a baking tray with baking sheet, cut side up, drizzle with olive oil and bake in the oven until crisp and golden on the edges, at 180C for about 5/10 minutes
ln the meantime prepare your tomato. Grate it with a grater, the flesh will be grated off. Season with salt and olive oil.
Remove the bread from the oven and rub it with the garlic. Do not over do it. Spoon the tomato mixture on the bread and season with salt and more olive oil if you’d like.
Serve immediately as otherwise the tomatoes will cause the bread to become soft.
