Vegan Banana Pancake Bites (Wholemeal)

Super easy and fun bite sized pancakes stuffed with sliced bananas!

Ingredients
  

  • 1 cup wholemeal flour 112 g
  • 2 tsp chia seeds
  • 1/2 tsp baking powder
  • 1 cup soy milk or milk of choice 236 ml
  • 2 medium banana

Instructions
 

  • Mix flour with baking powder and chia seeds. Then add milk and whisk until a smooth batter forms.
  • Slice the bananas, then dip each piece (one at a time) into the batter with a fork and place in an oiled or good non stick pan. Cook for a few minutes then flip and repeat.
  • Serve them with your favourite toppings! I used fresh blueberries, peanut butter and maple syrup! So tasty!
