Easy Vegan Scallion Pancakes

Ingredients
  

  • 300 g all purpose flour 2 cups
  • a pinch of salt
  • 1/2 cup boiling water
  • 1/4 cup water room temperature

  • 3 tbsp oil
  • 1 tsbp flour
  • 1 1/2 tsp black pepper
  • 5 scallions/spring onions

Instructions
 

  • Mix flour and salt. Add hot water while mixing with chopsticks or a fork, then add the cold water and mix until it is absorbed and then mix with your hands to create a dough. Transfer to a surface, dust with flour and knead until smooth and firm, 5 minutes. Cover and let rest for 20/30 minutes.
  • Chop the scallions and combine flour with pepper and warm vegetable oil to create a paste.
  • When the dough has rested, knead a little more. Then divide it into 6 parts. Make a ball out of each, slightly oil the surface and begin to roll it out to a rectangular shape and very thin. flip the dough to avoid sticking. Add some of the paste to the the top, then sprinkle the whole surface with scallions. Roll the rectangle on itself from the longest side to form a tube and pinch the sides to close it. Now take the tube and make a roll and seal the end. Flatten with your hands and let rest a few minutes while you make the others. Then roll it out int a circle.
  • Cook in a pan with some oil on medium/high heat for 3/5 minutes on each side
