Press your tofu to remove excess water and cut into slices.
Mix cornstarch with salt, pepper, paprika, garlic powder and mixed herbs. Then coat the tofu in it.
Heat up some olive oil in a pan and fry the tofu on both sides until golden.
Toast your bread, spread pesto on one side, then add the tofu and sun-dried tomatoes. Spread romesco sauce on the other side. Cut in two halves, enjoy!
