First grate your potatoes, I left the skin on to avoid waste but you can peel them if you prefer. Before adding them to a mixing bowl, remove excess water by squeezing them in your hands or using a cheese cloth. Add to a mixing bowl and season with salt and pepper, mix to combine.
Heat up some olive oil on a pan or use a really good non stick pan. Then take a big tbsp of the grated potato and place it in the pan, flattening it down with the back of the spoon. Repeat for the rest of the mixture.
Cook for 5 minutes on each side until golden brown and crisp, then drain on some kitchen paper.
