This pasta sauce is indredibly creamy and comforting. It's made from roasted bell peppers and it requires very basic ingredients. Served with spinach, it's the perfect healthy and filling lunch or dinner.
Cut the peppers in small pieces(3/4 cm), cut the onion roughly and peel and crush the garlic. Place in a baking tray, season with olive oil, salt and pepper and herbs. Mix to combine and cook in the oven for 15 minutes at 210C or until cooked.
In the meantime soak the cashews in hot water and boil the pasta al dente (keep some pasta water aside in case you need it). Once the peppers are ready put everything in a blender, add cashews, a splash of water and season to taste and blend until smooth. (If it helps add more pasta water)
When the pasta is ready add it to a pan or bowl, then add thee sauce,spinach, add a few tbsp of pasta water and add spinach, if fresh let it wilt, then toss everything well until creamy. Enjoy!
